Homemade Peanut Butter Cups

This recipe is from All Recipes.com. It's really easy to make and only requires a few ingredients.




Ingredients:
2 cups milk chocolate chips
2 tablespoons shortening
1/2 cup butter
1/2 cup crunchy peanut butter
1 cup confectioners' sugar
2/3 cup graham cracker crumbs
cupcake liners

Preparations:
  1. Melt chocolate chips and shortening over low heat.
  2. Fill bottom and patial edges of cupcake liners with the melted chocolate chips.
  3. Refrigerate for 15 minutes until hard.
  4. Melt butter and add graham cracker crumbs, peanut butter, powdered sugar and mix well.
  5. Take 1/2 tablespoon of graham cracker mixture and layer over chocolate in cupcake liners.
  6. Refrigerate for 15 minutes.
  7. Top each liner with remaining melted chocolate mixture.
  8. Refrigerate for 15 minutes.

Betty Crocker's Brownie Goody Bars

This is a really rich treat that's best served with some milk!

Ingredients:

1 box Original supreme brownie mix
2 eggs
1/4 cup of water
1/3 cup of vegetable oil
1 tub of Vanilla frosting
3/4 cup chopped salted peanuts
3 cups of Rice Krispies cereal
1 cup of peanut butter
1 bag of semisweet chocolate chips

Directions:

  1. Mix brownie mix with water, eggs, vegetable oil and hershey packet. Bake as directed.

  2. Top brownies with peanuts and let cool.
  3. Melt chocolate chips on low and add peanut butter. Mix well.
  4. Add melted chocolate chips/peanut butter mixture to Rice Krispies and mix well.

  5. Frost cooled brownies with with vanilla frosting.
  6. Top brownies with Rice Krispies mixture.

  7. Refrigerate for 30 minutes.

Servings: 24 brownies

Slow Cooker Chicken Tortilla Soup

I'm a huge fan of Cafe Rio's chicken tortilla soup so I thought that I'd try to make a homemade version. This recipe is great for Sundays.

Ingredients:

1 14.5 ounce can of stewed tomatoes in Mexican sauce
1 lb of chopped chicken breast
4 ounces of green chiles chopped
1/2 large onion chopped
1 teaspoon Ground Cumin
1 teaspoon Chili Powder
1 teaspoon of dried Cilantro
1/2 teaspoon salt
1 tablespoon of minced garlic
2 cups of water
1 can of chicken broth
12 ounces of Enchilada sauce
tortilla strips

Preparations:


  1. Chop chiles, onion and chicken. (I used my small food processor and it saved a ton of time.)

  2. Pour chicken broth, enchilada sauce, water and stewed tomatoes into crockpot. Mix well.

  3. Add cilantro, salt, garlic, chili powder and cumin to mixture. Mix well.

  4. Add chicken, chilis and onion to crock pot.

  5. Cook on high for 2 1/2 hours.

  6. Top with tortilla strips and sour cream.

Slow Cooker Pull Pork Sandwiches

I'm not a big fan of pork and my husband is very picky about how it's cooked but this recipe is tasty enough that even the pickiest pork eater will want to give it try.

Ingredients:

2 cans or 24 ounces of Root Beer
2lbs of pork (I used to really thick pork chops)
1 bottle of Barbeque sauce
2 pieces of cooked bacon crumbled
4 Sandwich rolls


Preparations:


  1. Pour root beer into crock pot. Add pork and cook on high until it falls apart. For me this was approximately four hours.

  2. Take the pork and shred it. I did this by using my Kitchen Aid with the bread attachment tool. It shredded the pork fabulously without me having to do any real work.

  3. Add the bottle of barbeque sauce and crumbled bacon to the pork. Mix well.

  4. Lightly toasted your sandwich roll open faced. Top with pork and serve.

Mrs. Field's Oatmeal Chocolate Chip cookies

Everytime we went to the mall when I was a small child, my mom would always swing by Mrs. Field's and let us pick out a cookie as a treat. To this day - I love those cookies! So here's a recipe that I found for making her oatmeal chocolate chip cookies.

Ingredients:

1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 cup of butter (2 sticks of softened butter)
2 cups of flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 1/2 cups of oatmeal
1 12 ounce bag of chocolate chips
1 Hershey bar (grated)

Preparations:

  1. Mix butter, sugars, vanilla and eggs.

  2. Separately combine baking powder, baking soda, salt and flour.

  3. Mix both sets of ingredients.

  4. Add oatmeal. Mix well.

  5. Add chocolate chips and grated Hershey bar.

Bake at 375 for approximately 12 minutes.

Low Calorie Apple Spice Bread

Here's a yummy recipe for some apples that need to be used or they'll have to be tossed!

Ingredients:

3/4 cup shredded peeled apple
1/4 cup of oil
2 egg whites
1 1/2 cups of flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/2 teaspoon shredded orange peel

Preparations:

  1. Combine apples, oil and egg whites.
  2. Separately, mix flour, baking soda, baking powder, nutmeg, cinnamon and orange peel.
  3. Mix both sets of ingredients.
Bake at 375 for approximately 50 minutes. Calories: Less than 200 per slice

Disney's Chocolate Peanut Butter Bars

Here's an even easier recipe than the one I previously posted.

Ingredients:
  • 2 1/2 cups graham cracker crumbs
  • 1 cup peanut butter
  • 1 cup butter, melted
  • 2 cups semisweet chocolate chips
  • 2 3/4 cups confectioners' sugar

Preparations:

  1. In a medium bowl, stir together graham cracker crumbs, confectioners' sugar, peanut butter and melted butter.
  2. Press firmly into the bottom of a 9x13 inch pan.
  3. Melt chocolate chips over a double boiler or in the microwave, stirring occasionally.
  4. Spread melted chocolate over the crumb crust.
  5. Chill for about 5 minutes, then cut into bars before the chocolate is completely set, then chill until ready to serve.

I used my nifty little food processor to grind the graham crackers up. It was a huge time saver!

Hershey's Double Peanut Butter and Milk Chocolate Chip Cookies

Is there anything better than chocolate and peanut butter combined? (If there is - I haven't found it!)

Check out this easy recipe from Hershey's -

Ingredients:
1 stick of butter
3/4 cup of sugar
1 egg
1/2 teaspoon of vanilla
1/3 cup of peanut butter (I used chunky)
1 1/4 cups of flour
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 cup of milk chocolate chips
1 cup of peanut butter chips

Preparations:

  1. Combine egg, vanilla, sugar, peanut butter and butter. Mix well.
  2. Separately - combine flour, salt, and baking soda.
  3. Mix both sets of ingredients.
  4. Add peanut butter and milk chocolate chips.
  5. Bake at 375 for 12 minutes (approximately)

Red Lobster's Cheddar Bay Biscuits

Whenever I go to Red Lobster, I find myself drooling and losing all self control over their cheddar biscuits. They are just so good! Turns out, you make these tasty little biscuits at home and the recipe is way easy! I got this from Recipezaar.

Ingredients:
  • 2 1/2 cups Bisquick baking mix

  • 4 tablespoons cold butter

  • 1 cup sharp cheddar cheese, grated

  • 3/4 cup cold whole milk (I substituted buttermilk and it was just as tasty)

  • 1/4 teaspoon garlic powder

Top with:

  • 2 tablespoons butter, melted

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon dried parsley flakes

  • 1 pinch salt
Preparations:
  1. Preheat oven to 400°F.

  2. Combine Bisquick and cold butter. Don't combine too thoroughly. There should be small chunks of butter about the size of peas.

  3. Add cheddar, milk and 1/4 tsp garlic.

  4. Mix until combined, but don't over mix.

  5. Drop 9 equal portions onto greased cookie sheet.

Bake at 400 degrees for ten minutes.

Topping:

  1. Melt 2 tbsp butter in a bowl. Stir in 1/2 tsp garlic powder and parsley flakes.

  2. Use a pastry brush to spread garlic butter over tops of biscuits.
