Easy Apple Crisp

Everytime I make this for company or get togethers - it's a huge hit and it's very easy.

Ingredients:

1 cup quick cooking oats
2/3 cup packed brown sugar
1/2 cup all purpose flour
1/2 cup butter, softened
1 - 20 ounce can of apple pie filling

Preparations:
  1. Combine oats, brown sugar, flour and butter
  2. Press 2/3 of mixture into greased 9x13 pan
  3. Pour apple pie filling over mixture
  4. Top with remaining oat mixture and bake at 350 for 30 minutes

Mom's Homemade Meat Loaf

Ingredients:

2lbs ground beef
1 cup finely crushed saltine crackers
1 egg, beaten
1/2 cup finely chopped onion
1/2 cup finely chopped bell pepper
1/2 cup tomato sauce
1 tbsp Worcestershire sauce
1 1/2 teaspoons salt
1 teaspoon dried crushed thyme
1/2 teaspoon black pepper
1/2 cup ketchup
3 slices of bacon (optional)

Preparations:

This actually makes enough for two meatloaves or one really big one. The kids really loved it.

  1. Mix all of the ingredients. except for ketchup together.
  2. Bake as one loaf or two at 375 for 30 minutes or until internal temperature read 155F

Chicken and Green Chile Enchiladas

Ingredients:

3 cups cooked chopped chicken
4 cups shredded cheddar cheese
10 green onions, finely chopped
2 teaspoons chili powder
2 - 10 3/4 ounce cans condensed cream of chicken soup
2 cups sour cream
1 - 7 ounce can diced green chile peppers, undrained
12 - 6 inch corn tortillas

Preparations:
  1. Preheat oven at 350.
  2. Combine chicken, 2 cups of cheese, onions and chili powder
  3. In another bowl - combine sour cream, soup and peppers
  4. Stir 1 cup of the sour cream mixture into the chicken mixture
  5. Spread 1/2 cup of combined mixture into greased 9x13 pan
  6. Fill tortilla with 1/2 cup of chicken mixture, roll tortilla and place in pan. Repeat process until all tortillas are filled.
  7. Cover tortillas with soup mixture and two cops of cheese.
  8. Bake uncovered for 35-45 (until bubbly)
