Betty Crocker's Ultimate Triple Chocolate Bars

This is a recipe that can be modified. I used dark chocolate chips instead of semisweet chips and milk chocolate instead of vanilla. The butter should NOT be room temperature. They say it should be softened but if it's at room temperature, your crust won't be more than a pile of brown crumbs that aren't cohesive at all. I didn't take a picture because my crust wasn't quite right and frankly, Betty's site makes this look for more appetizing.

The cream cheese gives this bar a nice tangy taste and my husband, who's on a low calorie diet, ate these until his guilt kicked in.

Ingredients:

  • 1 bag (12 oz) semisweet chocolate chips (2 cups)
  • 2 packages (3 oz each) cream cheese
  • 2/3 cup evaporated milk
  • 2 cups Original Bisquick® mix
  • 3/4 cup sugar
  • 1/2 cup unsweetened baking cocoa
  • 3/4 cup butter or margarine, softened
  • 1 cup white vanilla baking chips
  • 1 bag (6 oz) semisweet chocolate chips (1 cup)
Ingredients:
  1. Heat oven to 375°F. In 2-quart saucepan, heat 2 cups chocolate chips, the cream cheese and milk over low heat, stirring constantly, until chips are melted and mixture is smooth. Cool while making crust.
  2. In medium bowl, mix Bisquick mix, sugar and cocoa. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly.
  3. Press half of the crumbly mixture (2 cups) on bottom of ungreased 13x9-inch pan. Sprinkle with white vanilla baking chips. Spoon chocolate mixture over crumbly mixture and chips; spread evenly.
  4. Sprinkle with remaining crumbly mixture and 1 cup chocolate chips. Press lightly with fork.

If you love chocolate and oatmeal then this is the bar for you. My only gripe about this recipe is that I find the Better Homes and Garden cookbook - not so easy to scan.

2 eggs
2 teaspoons vanilla

1 14 ounce can of sweet condensed milk
1/2 cup chopped walnuts or pecans
2 teaspoons vanilla
2 tablespoons of butter

Preparations:
  1. Mix oatmeal, butter, brown sugar, vanilla, flour, eggs and baking soda.
  2. Take 2/3 of that mixture and pack it into a 9 x 13 pan.
  3. Melt chocolate with butter over medium to low heat, add milk and nuts.
  4. Pour chocolate topping over oatmeal base.
  5. Drop remaining oatmeal mixture over chocolate.

Disney's Chocolate Peanut Butter Bars

Here's an even easier recipe than the one I previously posted.

Ingredients:
  • 2 1/2 cups graham cracker crumbs
  • 1 cup peanut butter
  • 1 cup butter, melted
  • 2 cups semisweet chocolate chips
  • 2 3/4 cups confectioners' sugar

Preparations:

  1. In a medium bowl, stir together graham cracker crumbs, confectioners' sugar, peanut butter and melted butter.
  2. Press firmly into the bottom of a 9x13 inch pan.
  3. Melt chocolate chips over a double boiler or in the microwave, stirring occasionally.
  4. Spread melted chocolate over the crumb crust.
  5. Chill for about 5 minutes, then cut into bars before the chocolate is completely set, then chill until ready to serve.

I used my nifty little food processor to grind the graham crackers up. It was a huge time saver!

No Bake Chocolate Peanut Butter Bars

Here's a recipe for Super Bowl Sunday. These bars are easy to make and they taste so good I ate two!

Ingredients:
  • 2 cups peanut butter - divided use

  • 3/4 cup butter or margarine

  • 2 cups powdered sugar

  • 3 cups graham cracker crumbs

  • 2 cups (12 ounce package) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels - divided use

Preparations:

  1. Take a rolling pin and crush graham crackers on hard clean surface. (Each box of graham crackers comes with three individual packets of crackers. It will take two of these to make 3 cups of crushed graham crackers.)

  2. Beat 1 1/4 cups peanut butter and butter in large mixer bowl until creamy. Gradually beat in 1 cup powdered sugar.

  3. With hands or wooden spoon, work in remaining powdered sugar, graham cracker crumbs and 1/2 cup chocolate chips.

  4. Press evenly into greased 13 x 9-inch baking pan. Smooth top with spatula.

  5. Melt remaining peanut butter and remaining chocolate chips in medium, heavy-duty saucepan over lowest possible heat, stirring constantly, until smooth.

  6. Spread over graham cracker crust in pan.

  7. Chill for at least 1 hour or until chocolate is firm; cut into bars. Store in refrigerator.

Martha Stewart's Pumpkin Chocolate Chip Bars

This recipe comes with a story. It's a story of how even though it was late, I still got my butt to the gym only to return home to find that my husband did not take the brownies out of the oven as directed. As a result, they were in for AN HOUR past the correct time. So, no picture of my yummy Pumpkin Chocolate Chip BRICKS. :)

Ingredients:

2 cups all-purpose flour
1 tablespoon pumpkin-pie spice
1 teaspoon baking soda
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 cup sugar
1/4 cups brown sugar, packed
1 large egg
2 teaspoons vanilla extract
1 cup canned pumpkin puree
1 package (12 ounces) semisweet chocolate chips

Preparations:

Mix the wet stuff - pumpkin puree, sugar, vanilla, egg, butter. Separately mix flour, pumpkin-pie spice, salt and baking soda. Mix well. Combine both sets of ingredients and add chocolate chips.

Bake at 350 for 35-40 minutes (AND NOT AN HOUR AND 35 MINUTES -not that I'm bitter or anything. :)
