Ingredients:
7 cooked potatoes
1/2 cup chopped onion
1/2 cup chopped green onion
1 teaspoon garlic
1 cup of shredded cheddar cheese
6 slices of bacon
1 10 oz can of Healthy Choice Cream of Mushroom Soup
1/2 cup Low fat Sour Cream
1 tsp salt
1 tsp pepper
Preparations:
- Cook bacon until it's well down. Add onion and garlic. Cook for five minutes on low heat.
- In a bowl: mix soup, sour cream, 1/4 cup of cheese, green onions.
- Chop up cooked potatoes. (It's easier if you take off the skin.)
- Mix the soup mixture with potatoes.
- Add garlic/onion/bacon mixture.
- Mix in salt and pepper.
- Pour mixture into casserole dish and top with remaining cheese.
- Bake at 400 degrees for 20 minutes or until cheese is melted.
