Breakfast Casserole

The holidays have me very busy so sadly, I haven't posted in too long. Here's an awesome easy recipe that I just made tonight. It was a huge hit and made entirely from ingredients I already had. It's also low calorie. It's based on this recipe: Hash Brown Casserole

Ingredients:

7 cooked potatoes
1/2 cup chopped onion
1/2 cup chopped green onion
1 teaspoon garlic
1 cup of shredded cheddar cheese
6 slices of bacon
1 10 oz can of Healthy Choice Cream of Mushroom Soup
1/2 cup Low fat Sour Cream
1 tsp salt
1 tsp pepper

Preparations:

  1. Cook bacon until it's well down. Add onion and garlic. Cook for five minutes on low heat.
  2. In a bowl: mix soup, sour cream, 1/4 cup of cheese, green onions.
  3. Chop up cooked potatoes. (It's easier if you take off the skin.)
  4. Mix the soup mixture with potatoes.
  5. Add garlic/onion/bacon mixture.
  6. Mix in salt and pepper.
  7. Pour mixture into casserole dish and top with remaining cheese.
  8. Bake at 400 degrees for 20 minutes or until cheese is melted.
