Ingredients:
- 2lbs of cubed roast beef
- 1/2 cup of onions
- 1/2 cup sliced green peppers
- 2 tablespoons of Olive oil
- 2 tablespoons of Curry powder
- 1 packet of instant brown gravy (should make 2 cups)
- Rice
- Cube meat into 1/2 inch cubes. Using heavy skillet, saute 1/2 cup onions and 1/2 cup green pepper in 2 tablespoons olive oil. Toss cubed beef in bowl with 2 tablespoons curry powder.
- Make gravy according to directions on the package. Heat to low boil.
- Cook rice, using box recipe for 6 servings.
- Combine cubed into cooked onion, green pepper mix. Fold until heated through. Add heated gravy. Stir and remove from heat. Serve rice and pour curry beef mixture on top.
