Quick Mexican Pizza

There's this cool site that I found the other day that actually has an entire family menu planned out a month at a time.

Here's a fabulous recipe from Familyfun.com:

Ingredients

1/2 pound lean ground beef
1-1/2 tsp. chili powder
1/2 tsp. cumin
1 cup salsa
4 flour tortillas
2 cups shredded Monterey Jack cheese
Green pepper
Onion
Mushrooms

Preparation

In a skillet, cook meat on medium high heat until it browns. Drain off excess liquid and stir in the chili powder and cumin.

Spread 1/4 cup salsa and 1/2 cup of the meat mixture on each tortilla. Top each with 1/2 cup cheese and peppers, onions or mushrooms, as desired. Bake 8 to 10 minutes at 400 degrees, until crisp and lightly browned. Makes 4 servings.
