Betty Crocker's Easy Oven Beef Enchiladas

If you haven't seen Betty Crocker's website, I highly recommend it. There's lots of easy budget friendly recipes for feeding the family. Here's one I recently made that turned out well and was very easy.

Ingredients:

1lb lean ground beef (or turkey)
1/2 cup milk
2 cups of hot water
1 box Hamburger Helper Cheesy enchiladas
8 tortillas
1 16-oz jar of salsa
1 cup shredded Cheddar Cheese
3 tablespoons milk

Preparations:

  1. Cook beef over medium heat until done. Drain fat.
  2. Stir in 1/2 cup of milk, hot water, and uncooked rice and sauce mix pouches from Hamburger Helper mix. Heat to boiling, stir occasionally.
  3. Reduce heat, cover, and simmer for 15 minutes (stir occasionally).
  4. Fill tortillas with an even amount of mixture, roll up and place seam side down in 9x13 pan. Cover with salsa and cheese.
  5. Bake for 15-20 minutes at 350.
  6. Mix 3 tablespoons of milk and contents of mix pouch from HH box and drizzle over enchiladas.
