Velveeta's Cowboy Quesadillas

Here's a really easy recipe for game day.


1 lb. (16 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
6 flour tortillas (10 inch)
4 cups shredded cooked chicken breast
4 green onions, thinly sliced
1 can (10 oz.) Diced Tomatoes & Green Chilies, undrained

  1. Over medium heat, melt Velveeta and diced tomatoes. Stir well.
  2. Add chicken and onions.
  3. In large nonstick pan, place one tortilla and 1/2 cup chicken mixture. Fold tortilla in half.
  4. Cook on medium heat for one minute on each side or until golden brown. (Be careful. I've been known to burn more than one tortilla.)
  5. Repeat process with remaining tortillas.
