Zucchini Muffins

My very nice neighbor, Andrea, made these for us over the holiday season and they were so good that I begged for the recipe. This is actually for 2 loaves of bread baked at 325 degrees for one hour.


Ingredients:
  • 3 Eggs
  • 2 tsp Vanilla
  • 1 Cup Oil
  • 2 Cups Sugar
  • 2 Cups Grated Zucchini (Peeled)
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 3 tsp Cinnamon
  • 3 Cups Flour
  • 1 Cup Chopped Nuts (Optional)
  • 1/2 Cup Raisins (Optional)
Preparations:
  1. Beat eggs until light and fluffy. Add vanilla, oil, sugar and zucchini. Add flour with baking soda, salt and cinnamon and mix until well blended. 
  2. Makes 18 muffins. Bake in greased muffin pan (or use cupcake holders) at 375 for approximately 14 minutes. Check with spaghetti strand if it comes out clean, it's done.

Interesting recipe. Thanks a lot for sharing. Zucchini really combine well with other ingredients for muffins. Why not try also bran zucchini muffins. Start a day with them. Really good for breakfast.
