Taste of Home's Lemon Poppy Seed Bread

This is the easiest lemon poppy seed bread you will ever make. Need something for a bake sale? I'd go with this recipe. It makes two loaves and it's easy.

  • 1 package (18 1/4 ounces) white cake mix
  • 1 package (3.4 ounces) instant lemon pudding mix
  • 1 cup warm water
  • 4 eggs
  • 1/2 cup canola oil
  • 4 teaspoons poppy seeds
  1. In a large bowl, combine the cake mix, pudding mix, water, eggs and oil. Beat on low speed for 30 seconds. Beat on medium for 2 minutes. 
  2. Fold in poppy seeds.
  3. Pour into two greased 9 x 5 in loaf pans. Bake at 350 degrees for 35 - 40 minutes or until a toothpick inserted near the center comes out clean.
  4. Cool in pans for 10 minutes before removing and placing on wire rack.
