Chicken Fajita Quesadillas

Here's an easy recipe from Mission.


10 medium sized tortillas
1 lb boneless, skinless chicken breasts
1 packet fajita seasoning
1 tablespoon olive oil
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1 small onion
8 ounces of cheddar cheese, grated
8 ounces of shredded Monterrey Jack cheese
Sour Cream


Cut chicken into small pieces and fry in oil until done. Add fajita seasoning (as directed). Dice onion and add to chicken. Chop all of the peppers into small pieces and add. Cook until peppers are tender.

Add cheddar cheese to tortilla and then top with chicken/peppers/onion mixture. Add a layer of Monterrey Jack cheese. Fry until the cheese is melted. Top with sour cream.
