Ham Fried Rice

Saturdays are a time for grocery shopping and leftovers. This recipe is great if you have leftover meat and/or rice.

Ingredients:

2 eggs, scrambled
2 cups rice, cooked and cold
1 1/2 cups cooked ham, cubed
1/4 cup onion, chopped
2 tablespoons Olive oil
2 tablespoons Soy Sauce
1 packet Fried Rice seasoning

Preparations:
  1. Over medium heat in oil, cook onions until soft.
  2. Add ham and rice. Mix with onions.
  3. Add soy sauce and packet seasoning.
  4. Add eggs. Cook until mixture is thoroughly warm and mixed.
  5. Add more Soy sauce if needed!
  6. Salt to taste.

I was pleasantly surprised how good this stuff was. Maybe I was just hungry when I ate it? :)
