My Healthy Pudding Cake

We had company over the weekend and in an effort to support my husband's healthier lifestyle, I created a dessert that was low in calorie and had fruity nutritional value.

Ingredients:

Cake:
1 white cake mix
3 eggs
1 1/4 water
1/3 cup of Vegetable Oil.

Mix cake ingredients and bake in a 9x13 or two cake pans. Bake as directed.

Toppings:

1 Vanilla pudding mix
2 cups skim or 2% milk

Mix pudding as directed with milk. Beat two minutes on high. Refrigerate for an hour.

More toppings:

1 sliced banana
1 cup sliced strawberries

Preparations:
  1. Mix and bake cake as directed. Let it cool for an hour.

  2. Mix pudding and let it set in the fridge for an hour.

  3. Topped cool cake with pudding and a layer of fruit.
